The swiss chard leaves don't add much flavor, it's just another sneaky way I like to get in more veggies (and less processed food/carbs).</span><br />

If you use canned beans, I would suggest not adding any salt until you're ready to eat because we use dried beans in our recipe and don't need any salt.</div><div class="separator" style="clear: both; text-align: left;"><br />

<li>1 can (15 ounce) no salt added diced tomatoes with chilies</li>
<li>2 cups water</li>
<li>3/4 cup dry kidney beans (or 1 15-ounce can kidney beans)</li>
<li>3/4 cup dry black beans (or 1 15-ounce can black beans)</li>
<li>2 tablespoons chili powder</li>
<li>1/2 teaspoon red pepper flakes </li>
<li>1/2 tabelspoon garlic powder</li>
<li>1/2 tablespoon ground cumin</li>
<li>1/2 tablespoon ground pepper</li>
<li>salt to taste, but I skipped on the salt and you can't tell the difference</li>
<li>whatever veggies you have lying around that need to be used like TODAY (I rolled with half a zucchini, a hand-full of mushrooms, half a red bell pepper, and about 5 cups of baby spinach all chopped)</li>

<li>2 tbsp butter at room temperature </li>
<li>3/4 cup packed brown sugar</li>
<li>1/2 cup milk (I used almond)</li>
<li>2 large eggs</li>

<li>1/2 tsp ground cinnamon</li>
<li>1 tsp vanilla extract</li>
<li>1 (9 inch) unbaked pie crust</li>
</ul><div style="text-align: center;"><span style="font-size: small;">1.) Preheat oven to 350 degrees and start washing those potatoes. Once washed, place potatoes in a large pot with water, making sure all potatoes are under the waterline. Cover the pot and set on high heat to bring water to a roaring boil. Lower the heat (but keep the water boiling) and boil sweet potatoes until completely cooked (30 - 45 minutes). A fork comes in hand to poke the potatoes to check for "doneness".</span></div><div style="text-align: center;"><span style="font-size: small;"><br />

This recipe was originally found on this <a href="http://www.bodyrock.tv/2010/10/10/protein-balls/">website</a> but here's my version. My version is a little too sweet for me so I'm constantly tweaking it till I get the taste and consistency right. Right now this is my most recent recipe.<br />
<br />
Ingredients:<br />
<ul><li>1 scoop chocolate protein powder</li>
<li>1/4 cup nut butter (I had plenty of peanut butter to use but normally I stick with almond butter)</li>
<li>1/4 cup shredded coconut</li>
<li>1/4 cup agave</li>
</ul>Mix all ingredients together. Scoop out 1-tablespoon size portions and store in the refrigerator for about an hour to set. THAT'S IT!! Using the recipe above, it will make about 10 protein balls, or 5 servings. I always make them in batches of 20 balls or more... the boyfriend and I like them a lot. =)<br />

I know I used chicken legs (instead of the ever-healthy-constantly-raved-about chicken breast) but I tried this recipe with skinless/boneless breasts before and the chicken came out extremely dry and crumbly. I used chicken drumsticks with the skin ON and it made such a big difference! Chicken came out super moist and falling off the bone! The only negative... This was really good and even the boyfriend liked it! Couple of things I would change next time:<br />
<ul><li>I would soak the quinoa in water for about an hour or two before making this dish. The quinoa was actually cooked perfectly, but I like my quinoa on the softer side so this is only a preference.</li>
<li>Before baking, I would use a spoon or fork to gently stir quinoa mixture around in the baking dish. This should allow the quinoa to settle in a more even thickness on the bottom of the pan and disburse the seasonings more evenly. Because I used dried thyme, it floated to the top and kind of massed together in the center of the dish so when you ate a slice of the quinoa bake, the pointed end of the slice had lots of herb flavoring, but not so much as you worked your way to the outside of the slice.</li>

Well, since I left it out too long and the kim chee spoiled I have no review for the end product. Anthony and I did try it on day two or three and it was good then! A little too much garlic but that's what I liked about it. Most kim chee dishes don't have a garlic taste so it was different. This was good... really good! The only improvements I can think of is to use a more flavorful/pungent cheese instead of mozzarella. That would add a whole 'nother flavor pallet to the dish. Another suggestion is to get some protein in this meal!
